What Can I Eat On The Celiac Disease?

Celiac disease is a digestive disorder triggered by gluten consumption. It is found in many grains wheat, barley and rye. An immune reaction occurs in the small intestine which damages the surface of small intestine and causes inability to absorb the nutrients properly.

Consequently, the inability and decreased absorption of the nutrients causes vitamin deficiencies. This deprives the brain, bones, peripheral nervous system, liver and other organs of vital nourishment. This leads to other ailments and stunted growth in children.

Treatment of Celiac Disease:

  • There is as such no cure for celiac disease. At present, the only effective treatment available is a life long gluten- free diet. There are no medications available which can prevent damage or prevent the body from gluten’s effect.
  • Proper balanced diet free of gluten will help prevent the disease and allows the intestine to heal.

Allowed foods:

  • Arrow root, Corn, Flax, Millets, Rice, Buckwheat
  • Amaranthus, Cassava, Legumes
  • Sago, Sorghum, Soy
  • Tapioca, Yucca,Wild rice, Indian Rice grass
  • Nuts, Seeds, Teff, Potato
  • Fresh fruits, fish, meats, poultry

Foods to be avoided:

  • Wheat, Barley, rye, Triticale, semolina, white flour.
  • Processed food that may contain wheat, barley or rye. For example- potato chips, hot dogs, sausages, bouillon cubes, french fries, salami
  • Soy sauce, soups, tortilla chips, rice mixes, matzo, gravy, salad dressing
  • Pies, pasta, crackers, Cookies, breads, cereals.
  • Ice cream, instant coffee, candy bars, mustard, canned meats, yogurt
  • Beer should also be avoided.
  • Milk and other dairy products should also be avoided as it contains lactose.
  • Capsules, tablets and other vitamin capsules may also contain Gluten.
  • As wheat starch is commonly used as a binding agent in capsules and tablets. So, these things should be kept in mind while you are taking precaution in Celiac disease.
  • Patients should take a multivitamin daily, as they have malabsorption of nutrients.
